“I prefer to fresh fruit to cooked fruit pies. Having perfect Blueberry and Strawberry pie recipes, I wanted to find a Fresh Peach Pie recipe as well. I found this recipe with a gelatin base and it turned out pretty well. What particularly like about this recipe is that you could substitute all kinds of combinations of fruit and jello flavors. I think that Peach and Blueberry would be a good combination. Also consider adding crushed pineapple to the mix.” – April Ferre
Fresh Peach Pie
Ingredients
- 1 9-Inch Pie Crust
- 1 Cup Sugar
- 1/4 Cup Cornstarch
- 1 1/2 Cup Water
- 3 Ounces Peach or Orange Gelatin
- 3 Cups Fresh Peaches Diced
- Whipped Cream Optional
Instructions
- Mix the sugar, cornstarch and water in a saucepan. Bring to a quick boil. Cook until thickened and clear.
- Add the gelatin. Remove from heat and cool slightly. Add peaches and pour into pie shell. Refrigerate until cooled and set. Garnish with whipped cream, if desired.
Notes
Other fresh fruit or berries with compatible flavored gelatin may be substituted for the peaches and orange gelatin as above.
