
“I was invited out to a work dinner by my boss to the ‘fancy’ restaurant in town, The Mustard Seed. I had been in Davis for almost 25 years, but had never been before. It was so hard to choose among the many amazing options, including Duck Breast with Huckleberry Sauce and Scallops with Red Coconut Curry Sauce. I opted for the Salmon with Sweet Chili Sauce served with wild rice and roasted vegetables. Interestingly, just the weekend before I had added my own recipe for Sweet Chili Sauce to the cookbook. To say the meal was fantastic was an understatement, but I was very proud to say that my Sweet Chili Sauce tasted just like theirs! This my recreation of that meal, and the what’s even better is that it is super simple to make. ” – April Ferre
Salmon with Sweet Chili Sauce
Ingredients
- Salmon Fillets With or Without Skin
- Oil for Cooking
- Salt
- Sweet Chili Sauce Warm
- Fresh Chives Chopped
Instructions
- If using skin-on salmon, descale if necessary. Thoroughly dry salmon.
- In a fry pan, add a layer of oil to fully cover. Heat over medium-high heat until oil shimmers.
- Coat salmon with thin layer of oil and season with salt.
- Place salmon in fry pan (skin-side down) and press down on fillets for approximately 10 seconds to set.
- Reduce heat to medium and cook for 5 to 7 minutes until almost cooked through. Flip and cook another 60 to 90 seconds more.
- Remove to a paper towel to drain briefly.
- Serve skin side down and topped with sweet chili sauce and chopped fresh chives.
