Salmon with Sweet Chili Sauce

Ingredients
Salmon Fillets
With or Without Skin
Oil for Cooking
Salt
Sweet Chili Sauce
Warm
Fresh Chives
Chopped
Instructions
If using skin-on salmon, descale if necessary. Thoroughly dry salmon.
In a fry pan, add a layer of oil to fully cover. Heat over medium-high heat until oil shimmers.
Coat salmon with thin layer of oil and season with salt.
Place salmon in fry pan (skin-side down) and press down on fillets for approximately 10 seconds to set.
Reduce heat to medium and cook for 5 to 7 minutes until almost cooked through. Flip and cook another 60 to 90 seconds more.
Remove to a paper towel to drain briefly.
Serve skin side down and topped with sweet chili sauce and chopped fresh chives.
