Watermelon Lemonade

  • 2 1/2 Cups Water Divided
  • 1/2 Cup Sugar
  • 1 1/2 Pounds Watermelon Cubes
  • 1 Cup Meyer Lemon Juice


  • Simple syrup: In a small saucepan combine 1/2 cup water and sugar. Place over medium heat and stir until sugar is just dissolved. Remove from heat and cool.
  • Remove seeds from watermelon. Put watermelon in blender and puree until smooth. Run puree through a fine mesh strainer. Strain again. Yields approximately 2 cups juice.
  • In a pitcher, combine simple syrup, remaining water, watermelon juice and lemon juice. Chill. Serve over ice.
