- 2 1/2 Cups Water Divided
- 1/2 Cup Sugar
- 1 1/2 Pounds Watermelon Cubes
- 1 Cup Meyer Lemon Juice
- Simple syrup: In a small saucepan combine 1/2 cup water and sugar. Place over medium heat and stir until sugar is just dissolved. Remove from heat and cool.
- Remove seeds from watermelon. Put watermelon in blender and puree until smooth. Run puree through a fine mesh strainer. Strain again. Yields approximately 2 cups juice.
- In a pitcher, combine simple syrup, remaining water, watermelon juice and lemon juice. Chill. Serve over ice.
