“One Black Friday I decided to splurge on two huge spice racks to mount on my kitchen wall. Together, they hold 120 spice jars. While I had enough spices already to fill probably 3/4 of the rack, I went a little nuts stocking the rack with new and different spices I wanted to try. One of them was Sumac, a Middle Eastern spice ground from the berries of the native sumac bushes. It has a tangy lemony flavor and is a lovely purple-red color. This is the first recipe I tried with Sumac, and it came out great. The roasted rainbow carrots make it extra special. Serve with Lebanese Rice with Pine Nuts.” – April Ferre
Sumac Chicken with Roasted Vegetables
Ingredients
- 6 Tablespoons Olive Oil Divided
- 3 Tablespoons Sumac
- 1 Teaspoons Salt
- 1 Tablespoon Brown Sugar
- 1 Teaspoon Paprika
- 1 Teaspoons Dried Basil
- 1 Head Cauliflower Chopped into Florets
- 12 Ounces Rainbow Carrots Peeled & Cut into Chunks
- 2 Pounds Skin-On Chicken Thighs and/or Legs
- 1 Lemon Thinly Sliced
- 1 Red Onion Cut into Wedges
- 1/4 Cup Parsley Chopped
- 1/4 Cup Cilantro Chopped
- Juice from 1/2 Lemon
- 3 to 4 Cloves Garlic Minced (Fresh, not from a jar)
Instructions
- Preheat oven to 425 degrees. Line 2 baking sheets with foil and set aside.
- In a medium bowl, whisk together 3 Tablespoons Olive Oil with sumac, salt, brown sugar, paprika and basil. (If mixture is too paste like, add a bit more olive oil.)
- In a large mixing bowl, toss the carrots and cauliflower with halve of the spice mixture. Transfer the vegetables to the baking sheets.
- In the same large mixing bowl, rub the chicken with the remaining spice mixture. Transfer chicken to the baking sheets and top with lemon slices.
- Roast chicken and vegetables in the oven for 15 minutes. Then add the onions slices and toss vegetables. Cook an additional 15 to 20 minutes until vegetables are fork tender and the internal temperature of the chicken is 165 degrees.
- Mix together remaining 3 tablespoons olive oil, parsley, cilantro, lemon juice and garlic in a small bowl. Spoon mixture over cooked chicken and vegetables and serve immediately.
