Salmon Tacos with Citrus Slaw

Salmon Tacos with Citrus Slaw

Ingredients

For the Citrus Slaw:

  • 3 Cups Shredded Cole Slaw Mix
  • 1/4 Cup Cilantro Packed
  • 1 Large Red, Orange and/or Yellow Bell Pepper Julienne
  • 1/2 Cup Green Onion Sliced
  • 2 Large Oranges Chopped

For the Dressing:

  • 1/4 Cup Mayonnaise
  • 1/4 Cup Sour Cream
  • Juice and Zest of 1 Lime
  • 1 Large Clove Garlic Minced
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Pepper

For the Salmon:

  • 1 Tablespoon Brown Sugar
  • 1 Teaspoon Smoked Paprika
  • 1 Teaspoon Chili Powder
  • 1 Teaspoon Garlic Powder
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • Zest of 1 Lime
  • 1 Pound Salmon Fillets
  • Oil for Frying

For the Tacos:

  • Flour or Corn Tortillas
  • Avocado Sliced

Instructions

  • Combine all ingredients for the slaw in a large bowl. In a small bowl, mix together the dressing.
  • Toss the slaw with the dressing. Only dress as much of the slaw as you are going to eat in one sitting.
  • In a small bowl, combine brown sugar, spices and lime zest. Rub salmon fillets all over with the spice mix.
  • In a skillet, heat oil over medium heat until shimmering. Add salmon to pan and cook for 5 to 6 minutes. Flip and then cook for another 2 minutes or until cooked through. Remove to a plate.
  • Heat tortillas and assemble tacos with the salmon, citrus slaw and sliced avocado.
  • Serve immediately.
