Salmon Tacos with Citrus Slaw
Ingredients
For the Citrus Slaw:
- 3 Cups Shredded Cole Slaw Mix
- 1/4 Cup Cilantro Packed
- 1 Large Red, Orange and/or Yellow Bell Pepper Julienne
- 1/2 Cup Green Onion Sliced
- 2 Large Oranges Chopped
For the Dressing:
- 1/4 Cup Mayonnaise
- 1/4 Cup Sour Cream
- Juice and Zest of 1 Lime
- 1 Large Clove Garlic Minced
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Pepper
For the Salmon:
- 1 Tablespoon Brown Sugar
- 1 Teaspoon Smoked Paprika
- 1 Teaspoon Chili Powder
- 1 Teaspoon Garlic Powder
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Pepper
- Zest of 1 Lime
- 1 Pound Salmon Fillets
- Oil for Frying
For the Tacos:
- Flour or Corn Tortillas
- Avocado Sliced
Instructions
- Combine all ingredients for the slaw in a large bowl. In a small bowl, mix together the dressing.
- Toss the slaw with the dressing. Only dress as much of the slaw as you are going to eat in one sitting.
- In a small bowl, combine brown sugar, spices and lime zest. Rub salmon fillets all over with the spice mix.
- In a skillet, heat oil over medium heat until shimmering. Add salmon to pan and cook for 5 to 6 minutes. Flip and then cook for another 2 minutes or until cooked through. Remove to a plate.
- Heat tortillas and assemble tacos with the salmon, citrus slaw and sliced avocado.
- Serve immediately.
