Pra Ram (Chicken with Thai Peanut Sauce)
- Boneless, Skinless Chicken Breasts, or Thighs
- Soy Sauce
- Salt & Pepper
- Oil for Stir Frying
- Bok Choy and/or Broccoli Parboiled, Optional
- Thai Peanut Sauce
- Thinly slice chicken and season with soy sauce, salt and pepper to taste. Heat oil until very hot in a wok or large fry pan and stir fry chicken until cooked through.
- Add spinach, parboiled vegetables and peanut sauce and toss to coat. Heat through and serve with a side of rice.
