Caesar Salad Dressing

Ingredients

  • 2 Tablespoons Lemon Juice
  • 2 Cloves Garlic Pressed
  • 1 Teaspoon Anchovy Paste
  • 1 Teaspoon Dijon Mustard
  • 1 Teaspoon Worcestershire Sauce
  • 1 Cup Mayonnaise
  • 1/2 Cup Freshly Grated Parmesan
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • Milk or Half & Half As Needed

Instructions

  • In a medium bowl, combine lemon juice, garlic, anchovy paste, Dijon mustard, and Worcestershire sauce. Whisk until well combined.
  • Add mayonnaise and Parmesan cheese and mix well.
  • Season with salt and pepper. Taste and adjust seasonings as necessary.
  • Add milk or half & half as needed to achieve your desired consistency.
  • Makes about 1 1/2 cups.

Notes

Do not use pre-grated or shredded Parmesan cheese. Use a microplane to grate the cheese from a whole wedge.
