Haluski (Cabbage & Noodles)

“This dish was a such a great find. Around St. Patrick’s Day cabbage goes on sale for such a good price that it is hard to pass up. But then what to do with so much extra cabbage? I’m actually not that fond of just plain old boiled or sautéed cabbage, but this makes it really interesting while still highlighting the cabbage. You can add even more flavor with bacon or make it a more substantial meal by adding kielbasa.” – April Ferre

Haluski (Cabbage & Noodles)

Ingredients

  • 8 Ounces Egg Noodles
  • 1/2 Cup Butter
  • 6 Slices Bacon Chopped, Optional
  • – Or 1 Pound Kielbasa Sliced, Optional
  • 1 Large Yellow Onion Diced
  • 1 2- Pound Head Green Cabbage Cut into 1-Inch Pieces
  • 1/2 Teaspoon Salt Or to Taste
  • 1/4 Teaspoon Pepper Or to Taste
  • Chopped Fresh Parsley For Garnish, Optional

Instructions

  • Bring a pot of salted water to a boil and cook egg noodles according to the package directions. Drain well and set aside.
  • If adding bacon or kielbasa: In a large Dutch oven, melt 2 tablespoons butter over medium high heat. Cook bacon until crispy or kielbasa until well browned on both sides. Remove to a bowl and set aside.
  • Reduce heat to medium, and add remaining butter. Sauté onion until translucent, then add cabbage and cook until tender. Season with salt and pepper.
  • Add egg noodles and bacon or kielbasa, and toss to combine. Taste and add additional salt and pepper as necessary. Garnish with parsley, if desired.
