Haluski (Cabbage & Noodles)

Ingredients

  • 8 Ounces Egg Noodles
  • 1/2 Cup Butter
  • 6 Slices Bacon Chopped, Optional
  • - Or 1 Pound Kielbasa Sliced, Optional
  • 1 Large Yellow Onion Diced
  • 1 2- Pound Head Green Cabbage Cut into 1-Inch Pieces
  • 1/2 Teaspoon Salt Or to Taste
  • 1/4 Teaspoon Pepper Or to Taste
  • Chopped Fresh Parsley For Garnish, Optional

Instructions

  • Bring a pot of salted water to a boil and cook egg noodles according to the package directions. Drain well and set aside.
  • If adding bacon or kielbasa: In a large Dutch oven, melt 2 tablespoons butter over medium high heat. Cook bacon until crispy or kielbasa until well browned on both sides. Remove to a bowl and set aside.
  • Reduce heat to medium, and add remaining butter. Sauté onion until translucent, then add cabbage and cook until tender. Season with salt and pepper.
  • Add egg noodles and bacon or kielbasa, and toss to combine. Taste and add additional salt and pepper as necessary. Garnish with parsley, if desired.
