“One of the local grocery stores, Nugget Market, has a very nice prepared food section. One Easter we tried their Spinach, Cranberry and Goat Cheese Salad and I fell in love with it. Back in 2009 my Mom came up with her version of the accompanying Raspberry Poppy Seed Dressing. A decade later I realize that I should include the salad portion in our cookbook as well. In looking at other recipes online, I saw that some people also add pear to similar salads and it is a great optional addition.” – April Ferre
Spinach, Cranberry and Goat Cheese Salad
- Baby Spinach
- Dried Cranberries
- Goat Cheese
- Candied Walnuts
- Sliced Red Onion
- Diced Pears Optional
- Raspberry Poppy Seed Dressing
- Combine spinach, cranberries, goat cheese, candied walnuts, red onion, and pears. Serve with Raspberry Poppy Seed Dressing.
- Alternatively, use mixed greens instead of baby spinach.
