Sausage (or Bacon) & Eggs Breakfast Bowls (Frozen Meals)

“When I want to treat myself in the morning with my coffee, I enjoy popping a pre-made sausage and egg breakfast bowl into the microwave. Unfortunately vet bills combined with record high inflation made it hard to justify this luxury. So instead, I decided I could make my own breakfast bowls for half the price. This recipe will make breakfast bowls for a week!” – April Ferre

Sausage (or Bacon) & Egg Breakfast Bowls

  • 1 Recipe Diner-Style Scrambled Eggs
  • 1 Recipe Breakfast Potatoes
  • 1 Pound Bulk Sausage or Sliced Bacon
  • 1/2 Pound Cheddar Cheese Diced
  • 7 Green Onions Sliced, Optional
  • Sour Cream Optional


  • Prepare scrambled eggs and breakfast potatoes. Crumble and cook sausage or chop and fry bacon. Allow all ingredients to come to room temperature.
  • In a large bowl, combine eggs, potatoes, sausage or bacon, and cheese. Distribute approximately 8 ounces of the mixture into 7 freezer and microwave-safe containers. Store in the freezer until ready to eat.
  • To cook from frozen: microwave at 50% for 3 minutes. Stir and microwave on high for 1 minute more.
  • To cook from thawed: microwave at 30% power for 1 minute. Stir and microwave on high 1 minute more.
  • Serve topped with a dollop of sour cream and sprinkled with sliced green onion, if desired.
