Chicken Kamaʻāina

“This recipe is very similar to Hawaiian Chicken, except it is not breaded and is broiled as opposed to baked.” – April Ferre

Chicken Kamaʻāina

  • 4 2 1/2-Pound Chickens Cut Up
  • 1/3 to 1/2 Cup Soy Sauce
  • 1/2 Cup Catsup
  • 1/4 Cup Salad Oil
  • 1/4 Cup Lemon Juice
  • 1/2 Cup Pineapple Juice
  • 1 Clove Garlic Crushed
  • 1/2 Teaspoon Dry Ginger or 1-Inch Ginger Root
  • 1/2 Teaspoon Salt
  • Fresh Ground Pepper


  • Brush chicken all over with soy sauce and let stand at least 30 minutes.
  • Mix catsup with remaining ingredients. Brush catsup sauce on chickens and broil slowly. Turn and baste frequently until well browned and tender, about 1 hour.
