Banana Chocolate Chip Muffins

Banana Chocolate Chip Muffins

  • 2 Bananas Extra-Ripe
  • 2 Eggs
  • 1 Cup Brown Sugar Packed
  • 1/2 Cup Butter or Margarine Melted
  • 1 Teaspoon Vanilla
  • 2 1/4 Cup Flour
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon Salt
  • 1 Cup Chocolate Chips
  • 1/2 Cup Walnuts Chopped


  • Puree bananas in blender or food processor. In medium bowl, beat pureed bananas, eggs, sugar, butter and vanilla until well blended. Stir in chocolate chips and nuts.
  • In large bowl, combine flour, baking powder, cinnamon and salt. Add to banana mixture and stir until just blended. Spoon into well greased or paper-lined muffin cups.
  • Bake at 350 degrees for 25 to 30 minutes. Makes about 12 muffins.
