Banana Chocolate Chip Muffins
Ingredients
- 2 Bananas Extra-Ripe
- 2 Eggs
- 1 Cup Brown Sugar Packed
- 1/2 Cup Butter or Margarine Melted
- 1 Teaspoon Vanilla
- 2 1/4 Cup Flour
- 2 Teaspoons Baking Powder
- 1/2 Teaspoon Ground Cinnamon
- 1/2 Teaspoon Salt
- 1 Cup Chocolate Chips
- 1/2 Cup Walnuts Chopped
Instructions
- Puree bananas in blender or food processor. In medium bowl, beat pureed bananas, eggs, sugar, butter and vanilla until well blended. Stir in chocolate chips and nuts.
- In large bowl, combine flour, baking powder, cinnamon and salt. Add to banana mixture and stir until just blended. Spoon into well greased or paper-lined muffin cups.
- Bake at 350 degrees for 25 to 30 minutes. Makes about 12 muffins.
