
Bamia (Okra Stew)
Ingredients
- 1 1/2 Tablespoon Olive Oil
- 1 Small Onion Diced
- 5 Cloves Garlic Minced
- 1/2 Pound Okra In 1/2-Inch Slices
- 1/2 Teaspoon Cumin
- 1/2 Teaspoon Coriander
- 1/2 Teaspoon Salt
- 2 Roma Tomatoes Diced
- Juice of 1/2 Lemon
- 1 Tablespoon Fresh Parsley Chopped
Instructions
- In a large Dutch oven, heat olive oil over medium heat. Sauté onion until just soften, then add garlic and continue to cook until garlic is fragrant.
- Add okra and cook until tender but still slightly crisp. Add spices and cook for a minute or two to toast the spices.
- Add tomatoes and cook until they start to release some liquid, but do not let them get overly soft.
- Stir in lemon juice and parsley. Serve immediately.
