Bamia (Okra Stew)

Ingredients

  • 1 1/2 Tablespoon Olive Oil
  • 1 Small Onion Diced
  • 5 Cloves Garlic Minced
  • 1/2 Pound Okra In 1/2-Inch Slices
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Coriander
  • 1/2 Teaspoon Salt
  • 2 Roma Tomatoes Diced
  • Juice of 1/2 Lemon
  • 1 Tablespoon Fresh Parsley Chopped

Instructions

  • In a large Dutch oven, heat olive oil over medium heat. Sauté onion until just soften, then add garlic and continue to cook until garlic is fragrant.
  • Add okra and cook until tender but still slightly crisp. Add spices and cook for a minute or two to toast the spices.
  • Add tomatoes and cook until they start to release some liquid, but do not let them get overly soft.
  • Stir in lemon juice and parsley. Serve immediately.
