Queen of Muffins

“These are so good and the secret’s in the mixing! I copied this recipe as a bride from Grandma Cameron’s ‘Bastan Cooking School Cookbook.’ Sometimes for Sunday morning breakfast I add wild huckleberries from the mountains.” – Jean Hansen

Queen Of Muffins

Course: Muffins

Ingredients

  • 1/4 Cup Butter
  • 1/3 Cup Sugar
  • 1 Egg
  • 1/2 Cup Milk Scant
  • 1 1/2 Cup Flour
  • 2 1/2 Teaspoons Baking Powder

Instructions

  • Cream butter. Add sugar gradually, then the egg. Beat well. Sift baking powder with flour. Add to first mixture alternately with milk.
  • Bake in hot oven (425 degrees) for 13-15 minutes. Makes 9 muffins.

Notes

When I made this, I found I needed a bit more milk to achieve the right consistency.
