Pecan Balls (Mexican Wedding Cookies)
- 1 Cup Butter
- 1/4 Cup Sugar
- 2 Teaspoons Vanilla
- 1 Cup Pecans Chopped
- 2 Cups Flour
- 3/4 Teaspoon Salt
- Powdered Sugar
- Cream butter, sugar and vanilla. In medium bowl, combine flour and salt. Add dry ingredients bit by bit to butter mixture. Stir in pecans.
- Form into balls and place on cookie sheet. Bake at 300 degrees for 30 minutes. Do not brown. Cool and roll in powdered sugar.
