
“When my Grandma passed away, her sisters, Lois and Mary, came down from Utah for the memorial service. Aunt Lois shared a few recipes with me, including this one. This is an original recipe from one of her sons who ran a diner at a truck stop. It is one of my favorite recipes, and a favorite of my good friend, Joyce. Chicken A’la Patterson (AKA The Chicken)
Ingredients
- 3 to 4 Boneless, Skinless Chicken Breasts
- 2 Packages Chip Beef
- 12 Ounces Bacon
- 1 10.75-Ounce Can Cream of Mushroom Soup
- 1 Cup Sour Cream
Instructions
- If you have large chicken breasts, cut them in half lengthwise.
- Place 2 slices chipped beef underneath the chicken and then wrap the chicken and chipped beef with two slices of bacon.
- Place in a baking dish and bake at 325 degrees for 20 minutes. Drain. Bake 10 minutes more and drain again.
- Mix soup with sour cream and pour over chicken. Bake for 20 minutes more or until chicken reaches 165 degrees.
