Carrot Oatmeal Cookies

Carrot Oatmeal Cookies

Ingredients

  • 1/2 Cup Shortening
  • 1 Cup Carrot Grated
  • 1 Cup Honey
  • 2 Eggs Well Beaten
  • 2 Cups Flour
  • 2 Teaspoons Baking Powder
  • 1/4 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Ground Nutmeg
  • 2 Cups Quick Cooking Rolled Oats
  • 1 Cup Nuts Chopped
  • 1/2 Cup Raisins

Instructions

  • In large bowl, cream shortening. Stir in carrots, then honey and eggs. Gradually stir in flour, baking powder, soda, salt, cinnamon, nutmeg, oatmeal, raisins, and nuts.
  • Drop teaspoonfuls onto greased baking sheets. Bake at 350 degrees for about 12 minutes or until lightly browned.
