Carrot Oatmeal Cookies
Ingredients
- 1/2 Cup Shortening
- 1 Cup Carrot Grated
- 1 Cup Honey
- 2 Eggs Well Beaten
- 2 Cups Flour
- 2 Teaspoons Baking Powder
- 1/4 Teaspoon Baking Soda
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Cinnamon
- 1/2 Teaspoon Ground Nutmeg
- 2 Cups Quick Cooking Rolled Oats
- 1 Cup Nuts Chopped
- 1/2 Cup Raisins
Instructions
- In large bowl, cream shortening. Stir in carrots, then honey and eggs. Gradually stir in flour, baking powder, soda, salt, cinnamon, nutmeg, oatmeal, raisins, and nuts.
- Drop teaspoonfuls onto greased baking sheets. Bake at 350 degrees for about 12 minutes or until lightly browned.
