Cake Celebration – Royal Icing

“Royal icing is used for making flowers and other decorations in advance for cakes. It is a very hard icing, so you don’t want to frost a cake with it. You can also use it to make a hard thin icing on cookies.” – Calla Ferre

“I remember when my Mom was teaching cake decorating classes, she had a box full of royal icing flowers in the pantry. To me they were the prettiest candies I’d ever seen. It was a special treat when she’d allow me to have one. My favorite cake that Mom made as a professional cake decorator was a basket full of all sorts of flowers made of royal icing cascading down the side. If you are having difficulty finding the meringue powder, check craft stores like Michaels. If you still can’t find it, you can use an egg white recipe instead.” – April Ferre

Cake Celebration – Royal Icing

Course: Frostings & Fillings

Ingredients

  • 3 Tablespoons Meringue Powder
  • 1 Pound Powdered Sugar
  • 1/3 Cup Water

Instructions

  • Combine ingredients, mixing slowly. Then beat at high speed for 7 to 10 minutes until stiff. Keep covered at all times with damp cloth as icing dries very quickly.
  • Rebeat to restore texture after storing.
