Banana-Nut Muffins

Ingredients

  • 1 Cup Sugar
  • 1/3 Cup Shortening
  • 2 Eggs
  • 1 Cup Banana Mashed
  • 1 Teaspoon Vanilla
  • 2 Cups Flour
  • 1 Teaspoon Baking Soda
  • 1/4 Teaspoon Salt
  • 1/2 Cup Walnuts Chopped
  • 1/2 Cup Chocolate Chips Optional

Instructions

  • Cream sugar with shortening; beat in eggs. Add banana and vanilla. Mix well, then add dry ingredients and nuts, stirring just until blended. Add some chocolate chips if desired.
  • Bake in paper lined muffin cups at 350 degrees for about 20 minutes. Makes 16 muffins.
