Wash and dry kumquats. Slice kumquats in half lengthwise and remove any seeds.
In a medium saucepan, combine water, honey and lemon juice and bring to a boil. Add kumquats, return to a boil and then reduce heat to simmer for approximately 25 minutes or until kumquats are tender and translucent.
Remove from heat and let cool. Transfer the kumquats in their syrup to a mason jar and refrigerate for up to a month.
Can be eaten on their own as a snack or used as a topping for desserts. Use the syrup for making cocktails, as a soaking solution for baked goods, or to glaze roasted meats.
