Cut the tops off of the mini pumpkins, then take a fork and scrape out all of the seeds.
When they are clean inside, place a tablespoon of butter, some brown sugar (about 1 teaspoon) and cinnamon (about 1/8 teaspoon) inside. You can also add some chopped walnuts if desired.
Put the lid back on, place them on a cookie sheet and bake them at 425 degrees for 20 to 25 minutes or until soft.
