Prepare scrambled eggs and breakfast potatoes. Crumble and cook sausage or chop and fry bacon. Allow all ingredients to come to room temperature.
In a large bowl, combine eggs, potatoes, sausage or bacon, and cheese. Distribute approximately 8 ounces of the mixture into 7 freezer and microwave-safe containers. Store in the freezer until ready to eat.
To cook from frozen: microwave at 50% for 3 minutes. Stir and microwave on high for 1 minute more.
To cook from thawed: microwave at 30% power for 1 minute. Stir and microwave on high 1 minute more.
Serve topped with a dollop of sour cream and sprinkled with sliced green onion, if desired.
