Mediterranean Wrap

Ingredients

  • Lettuce
  • Tomato
  • Bell Pepper
  • Cucumber
  • Kalamata Olives
  • Onions
  • Feta
  • Salt, Pepper, Olive Oil & Vinegar Optional
  • Hummus
  • Tortillas or Flatbread

Instructions

  • In a small bowl, combine any or all of the first 7 ingredients.
  • If desired, dress the salad with salt, pepper, olive oil and vinegar (Balsamic, preferred.) If you are making these ahead of time, dress the salad lightly or not at all so that your wrap doesn't become soggy.
  • Spread hummus over tortilla, and top with salad, leaving enough room on sides of tortilla to wrap it up in the end. Wrap up as you would a burrito.
