Ingredients

  • Eggs Scrambled
  • Bacon Coarsely Chopped & Cooked
  • Diced Breakfast Potatoes Cooked
  • Onion Chopped & Sautéed in Butter
  • Mushrooms Diced & Sautéed in Butter
  • Roma Tomatoes Diced & Lightly Sautéed in Bacon Fat
  • Avocado Diced
  • Baby Arugula
  • Hollandaise Sauce
  • Green Onions Chopped, For Garnish

Instructions

  • Toss together all components and then drizzle with Hollandaise Sauce and top with green onions. Serve immediately.
