High Fiber Bran Muffins

Ingredients

  • 2 Cups Bran Cereal
  • 1 1/4 Cup Milk
  • 1 Cup All-Purpose Flour
  • 1/3 Cup Brown Sugar Firmly Packed
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/4 Cup Margarine Melted
  • 1 Egg Beaten

Instructions

  • Combine bran and milk; let stand for 5 minutes. Combine next 4 ingredients, set aside. Mix margarine and egg into bran mixture. Stir in flour mixture until just blended.
  • Spoon into greased or lined muffin tins. Bake at 400 degrees for 16 to 18 minutes or until done. Makes 12 muffins.
